Oatmeal Raisin Protein Muffins (For 12 muffins)

Ingredients:
- 1 cup old-fashioned rolled oats
- 1 cup oat flour for a gluten-free option
- 1 scoop of Soulfuel protein powder (vanilla or unflavored) (use vegan protein)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/4 cup almond milk (or any milk of your choice)
- 1/4 cup raisins
- 1/4 cup chopped walnuts or pecans (optional)
- 1-2 eggs (or flax egg)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large mixing bowl, combine the rolled oats, whole wheat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir until well combined.
- In another bowl, mash the ripe bananas with a fork until smooth. Add the honey or maple syrup, unsweetened applesauce, and almond milk, and mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the raisins and chopped nuts, if using.
- Spoon the batter into the prepared muffin tin, filling each cavity about 3/4 full.
- Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
