1 scoop of Soulfuel protein powder (vanilla or unflavored) (use vegan protein)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 ripe bananas, mashed
1/4 cup almond milk (or any milk of your choice)
1/4 cup raisins
1/4 cup chopped walnuts or pecans (optional)
1-2 eggs (or flax egg)
Instructions:
Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
In a large mixing bowl, combine the rolled oats, whole wheat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir until well combined.
In another bowl, mash the ripe bananas with a fork until smooth. Add the honey or maple syrup, unsweetened applesauce, and almond milk, and mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Gently fold in the raisins and chopped nuts, if using.
Spoon the batter into the prepared muffin tin, filling each cavity about 3/4 full.
Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
